Autumn hemp salad

It's the time of year when the days are getting darker, but the leaves are becoming more colourful. We have the perfect dish to bring this colourful autumn to your plate. Brighten up your meal with our nutritious hemp salad, which combines all the autumn colours on your plate. So not only is it delicious and healthy, it will also put you in a better mood.

Ingredients:

  • 200 grams chopped kale
  • 1 large sweet potato, cubed and roasted (about 200 grams)
  • 75 grams dried cranberries
  • 60 grams hemp seeds
  • Pecan Nuts

For the dressing:

  • 45 ml hemp oil
  • 15 ml apple cider vinegar
  • 5 grams Dijon mustard
  • 5 ml maple syrup
  • Salt and pepper, to taste
Hemp Seeds - peeled, unpeeled and roasted
Peeled, unpeeled or even tastefully roasted food-grade hempseeds of the highest purity.

Instructions:

Spread the sweet potato cubes on a baking tray, drizzle with oil and roast at 200°C for 20 minutes. Then place the kale, roasted sweet potato, cranberries and hemp seeds in a large bowl and mix them together. Now shake all the ingredients for the dressing in a small jar until they are well combined. Pour the dressing over the salad and toss. Now you can serve your salad immediately or chill it so that the flavours can combine. Just before serving, scatter a few pecan nuts over the salad. Enjoy!
