Hemp is not only a very nutritious ingredient for healthy meals, but can also be used when you feel like a special sweet snack. How about super chocolaty hemp-cookies, for example?
Ingredients:
- 3 tablespoons dark chopped chocolate (or more if you want it more chocolaty ;))
- 2 tablespoons peeled hempseeds
- 250g flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 2 tablespoons honey or maple syrup
- 60ml golden hemp seed oil
- 1 tablespoon water
- a bit cinnamon or vanilla extract if you like
Preparation:
Preheat the oven to 180°C.
Chop the chocolate. Put the chopped chocolate and the dry ingredients, i.e. the peeled hemp seeds, the flour, the baking powder and the salt, in a bowl and mix a little until combined. Now add the honey or maple syrup, the golden hemp seed oil and water to the dry mixture and mix until a uniform dough is formed.
→ If you want something special, add some vanilla extract or cinnamon, for example, or maybe nuts or dried fruit. Feel free to improvise.
→ To make the dough even more special, almond flour works very well as a flour alternative. This adds more healthy omega-3 fatty acids to the cookies and gives them a crunchy texture.
Line a baking tray with baking paper. Divide the dough into about 8 portions and shape them into small balls. Place the balls on the baking tray with a little distance between them and flatten them slightly with your hand or a fork.
Put the baking tray with the cookies in the preheated oven and bake for 10-15 minutes until golden.
They are super delicious when they are warm and the chocolate is still melted, but also cold with some hemp milk for example.
Enjoy!
