Ingredients for 4 servings:

  • 4 eggs
  • 200 g carrots
  • 240 g courgettes
  • 14 tablespoons flour of your choice
  • 2 tablespoons psyllium husks
  • 10 tablespoons peeled hemp seeds
  • 1 teaspoon salt
  • 1 teaspoon nutmeg, ground
  • 1 teaspoon black pepper, ground
  • 2 small garlic cloves
  • 4 tablespoons olive oil / hemp oil

Preparation:

Beat the eggs and separate the whites from the yolks. (Only the egg white is needed for this recipe, but you don't have to throw away the yolk in any case, you can use it elsewhere, for example for omelettes or scrambled eggs.) Peel the carrot and grate it together with the courgette with a very fine grater until they are almost mushy.

Put the vegetables and the egg whites in a bowl. Peel the garlic clove and either chop very finely or crush with a garlic press and add to the bowl. Then add all the other ingredients except the oil, mix everything well and then season again if necessary. Leave the mixture to infuse for about 15 minutes.

Heat the olive or hemp oil (depending on the pan, less is sufficient) in a frying pan. Divide the dough into about 12 pieces and form flat patties. Then gradually add the patties to the pan and fry on both sides at medium temperature. Important: Do not turn the patties until they have a certain stability, otherwise they may fall apart.

The flour and hemp seeds make these patties very filling. They are perfect for a vegetarian burger, but you can also have a small salad, or just tomatoes and a delicious herb dip.
