Warming hemp pumpkin soup

Now that autumn is in full bloom, pumpkin season is also here. It's the perfect time for a super quick, healthy and delicious dish to keep you warm as the days get colder, and our hemp pumpkin soup is an amazing choice.

Ingredients:

  • 1 medium pumpkin, cubed (about 500 grams)
  • 1 onion, chopped (about 150 grams)
  • 2 cloves garlic, minced (about 10 grams)
  • 1 teaspoon fresh ginger, grated (about 5 grams)
  • 1 litre vegetable broth
  • 250 ml hemp seed milk
  • 30 grams hemp seeds, for garnish
  • Salt and pepper, to taste
  • 1 teaspoon cinnamon

Instructions:

First fry the onion, garlic and ginger in a large pan until soft. Then add the diced pumpkin and fry briefly. Deglaze with vegetable stock and bring to the boil. Simmer the soup over a medium heat until the pumpkin is soft. Now puree everything and stir in the hemp seed milk. Finally, flavour the soup with salt, pepper and cinnamon, serve in bowls and sprinkle with hemp seeds and other seeds you like.
