Hemp seed stuffed pumpkin
In the cold season, drinks and dishes with pumpkin spice are everywhere. But how about getting your pumpkin spice from a real pumpkin?
At Signature Products, we love to cook with natural ingredients and flavours, and our hemp seeds are a perfect addition to this and even add more important nutrients to your dish. Whether alone or with others, our stuffed pumpkin with hemp seeds is an ideal dish for or a cosy meal with family, friends or for a little time for yourself.
Ingredients:
- 2 acorn squashes (or any pumpkin you prefer), halved and seeded
- 100 grams quinoa
- 200 ml vegetable broth
- 50 grams cranberries
- 30 grams hemp seeds
- 1 tablespoon honey
- 30 grams walnuts, chopped
- 2 cloves garlic, minced
- Olive oil, salt, and pepper to taste
- Fresh herbs (such as parsley or thyme) for garnish
Instructions:
Preheat the oven to 200°C. Drizzle the pumpkin halves with olive oil and season with salt and pepper. Roast them cut-side down in the oven for about 25 minutes. In the meantime, cook the quinoa in the vegetable stock until it is mushy. Carefully roast the hemp seeds and caramelise with the honey, stirring constantly. Mix the cooked quinoa with the cranberries, roasted hemp seeds, walnuts and chopped garlic. Fill the roasted squash halves with the quinoa mixture and place in the oven for a further 10 minutes. Garnish with fresh herbs before serving. Enjoy!
If you like you could also add some feta cheese on top before putting it in the oven for the last ten minutes.
For an even bigger hemp kick, you can of course also replace the olive oil with hemp seed oil. This adds a special twist and enriches the food with more important nutrients.
